Soup: Portuguese Sardine Soup

Ingredients:
2 x 120g cans of sardines in tomato sauce, undrained
2 cups of water
1/2 cup of white wine
1 onion, chopped
1 red bell pepper, chopped
2 cloves of garlic, minced
2 potatoes, peeled and chopped
1 bay leaf
Salt and pepper to taste
Instructions:
In a large pot, combine the sardines, water, wine, onion, red bell pepper, garlic, potatoes, and bay leaf.
Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the potatoes are tender.
Remove the bay leaf and discard.
Using an immersion blender, puree the soup until smooth.
Season with salt and pepper to taste.
Serve hot with crusty bread.
