Sandwich: Sardine and Avocado Sandwich


Ingredients:

2 cans of sardines in olive oil (120g each)

4 slices of whole wheat bread

1 ripe avocado, mashed

1 small tomato, sliced

1/4 cup of chopped fresh cilantro (10g)

2 tbsp of lemon juice

Salt and pepper to taste


Instructions:

Drain the sardines and place them in a mixing bowl.

Add the mashed avocado, chopped fresh cilantro, and lemon juice to the bowl, and stir everything together until well combined.

Season the mixture with salt and pepper to taste.

Toast the slices of whole wheat bread.

Spread the sardine and avocado mixture evenly over two slices of the toasted bread.

Top the sardine mixture with sliced tomato.

Cover with the remaining slices of toasted bread.

Cut the sandwiches in half and serve immediately.
