Main Dish: Sardine and Fennel Pasta

Ingredients:
400g spaghetti
2 tbsp olive oil
1 large fennel bulb, finely sliced
2 garlic cloves, finely sliced
1 tsp dried chilli flakes
2 x 120g cans sardines in olive oil, drained
zest and juice 1 lemon
handful chopped parsley
Instructions:
Cook the spaghetti following pack instructions.
Meanwhile, heat the oil in a frying pan over a medium heat.
Add the fennel, garlic and chilli, and fry for 10 mins, stirring occasionally, until the fennel is soft.
Add the sardines, breaking them up slightly with a wooden spoon.
Heat through for a few mins.
Drain the pasta and return to the pan.
Add the sardine mixture to the pan, along with the lemon zest and juice.
Toss everything together well.
Serve topped with the chopped parsley.
