Sandwich: Sardine Salad Sandwich
Ingredients:
2 cans of sardines in olive oil (120g each)
2 hard-boiled eggs, peeled and chopped
1 small onion, finely diced
2 tbsp of chopped fresh parsley (8g)
2 tbsp of mayonnaise
1 tbsp of Dijon mustard
Salt and pepper to taste
4 slices of bread
Instructions:
Drain the sardines and place them in a mixing bowl.
Add the chopped hard-boiled eggs, finely diced onion, chopped fresh parsley, mayonnaise, and Dijon mustard to the bowl, and use a fork to mash everything together until well combined.
Season the mixture with salt and pepper to taste.
Toast the slices of bread.
Spread the sardine salad mixture over two slices of the toasted bread.
Top with the remaining slices of bread.
Cut the sandwiches in half diagonally before serving.
