Salad: Sardine Salad with Lemon Dressing
Ingredients:
2 cans of sardines in olive oil (120g each)
4 cups of mixed greens (120g)
1 cucumber, sliced
1 avocado, sliced
1 lemon, juiced
2 tbsp of olive oil
Salt and pepper to taste
Instructions:
Drain the sardines and set aside the olive oil.
In a large bowl, mix together the mixed greens, sliced cucumber, and sliced avocado.
In a small bowl, whisk together the lemon juice and olive oil to make the dressing.
Gently add the drained sardines to the salad, and drizzle the lemon dressing over the top.
Season with salt and pepper to taste. Serve immediately.
