Sandwich: Sardine and Avocado Sandwich

Ingredients:
2 x 120g cans of sardines in olive oil, drained
1 avocado, pitted and mashed
2 tbsp of lemon juice
Salt and pepper to taste
4 slices of whole grain bread
1/2 cup of arugula
1/4 red onion, thinly sliced
Instructions:
In a bowl, mash the sardines with a fork.
Add the mashed avocado, lemon juice, salt, and pepper, and stir until well combined.
Toast the bread slices and spread the sardine and avocado mixture evenly over each slice.
Top each slice with arugula and red onion slices.
Serve immediately.
